Also called king salmon, this fish can weigh up to 120 pounds. It's flesh is soft in texture and high in fat, and ranges in color from off-white to bright red.
A grain-like crop grown in South America for its edible seeds. The small, ivory to light tan colored seeds are high in protein and have a delicate flavor. It can be cooked in ways that are suitable for rice.
An Asian mushroom, these fungus are usually blackish brown in color and have a crunchy texture and mild flavor. They can be bought fresh but often are dried and need to be re-hydrated before cooking.
Fruit that has been dehydrated so that the moisture content is between 15-25%. It is more concentrated in flavor and sweetness compared to the fresh version.
